Any leftover cordial to use in morning drinks, sweets, or for another batch of bikinis.
The Bikini Cocktail
Serves 10 people
Ingredients for the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Premix (produces 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Method
Making the Syrup: Combine all the ingredients into a pan, bring to a simmer, mixing until the sugar dissolves. Then, take off the heat and let it to reach room temperature entirely. Decant into an sealable bottle, close it and store chilled, where it will keep for about a month.
Preparing the Cocktail Base: Pour every spirits and syrup in a big jug, let it rest for an hour, then strain , ideally through a fine cloth, to ensure it's fully clarified.
For serving: Pour 85ml from the batch mix to a stirring glass packed with ice, and agitate carefully for a minute until cold. Strain into a chilled martini glass or equivalent, decorate with the cranberries and finish by giving it a quick spritz of the essential oil over the drink.
